The first step for any restaurant is to figure out whether a high temperature or low-temperature dishwasher unit is required. They are similar in that they use detergent and rinsing chemicals, but are different in their functionality. High-temperature ware-washers sanitize through the actual heat of the water, which is around 180 degrees Fahrenheit during the rinse. The washing occurs around 160 degrees Fahrenheit. One advantage of this process is the fact that the dishes typically dry faster and the dishes and glasses do not get harmed by possible sanitizer. A low-temperature dishwasher does not use two different temperatures for washing and rinsing. Both occur between 120 and 140 degrees Fahrenheit.
Due to these lower temperature ranges, the heat itself cannot sanitize the dishes, so sanitizing agents are used with the water, which can harm certain dishes and glassware.
